My XFCE desktop readjusts the configuration of my dual monitors after locking the screen, for instance, changing from an extended setup where the displays are arranged to the left of each other, to a mirrored display upon unlocking and returning to the desktop.

I'm guessing it's not the lock itself that triggers this, but the turning off of the screens. At least one of them is considered disconnected by xrandr which causes xfsettingsd to remove it from its configuration, then reset it to a default position when the screen is turned back on.
This should be fixed in xfce4-settings 4.19.2. You should be able to install it from AUR if you're on Arch.

4.19.x are development versions, so they'll never be in official arch repos.
You'll have to wait xfce 4.20, maybe at the end of this year.
