Thunar has the place "recently used files".
I can open it as a tab in thunar.
When I then open a file, I can find this file after in "recent:///". But not at the beginning or end of the list.
How do I have to sort so that I have the latest recently used file at the top of this list?
I have tried out all sorting-columns: Date created, date modified, Access date.
But non of them gives me the correct order.

Change the view to "Details" mode (Ctrl+2) and this will you give you headers. Click on the headers (date modified or recency) to select your sort view. Then you can switch back to any of the other modes and it will persist.
Or via command line:
gio set recent:/// metadata::thunar-sort-order GTK_SORT_DESCENDING
gio set recent:/// metadata::thunar-sort-column THUNAR_COLUMN_RECENCY
...and press Ctrl+r in thunar to refresh the view.

It doesn't appear so, no. The columns are set in xfconf and are applicable to all folders.
