I apologize if this is not part of Xfce, a little confused.
Pulse Audio icon (speaker) located in system tray has a setting in its context menu - Properties called "Show notifications when volume changes".
This setting when checked allows the graphic display of a speaker / volume bar notification that can appear in any corner of your screen desired.
I was wondering if it was easily possible to edit just the volume bar graphic without affecting any other notification boxes?
So say I wanted to change the height & width of the volume bar
Also want to center the graphic on the screen instead of having in a corner.
Does anyone know if anything like this is possible without a huge amount of programming knowledge?
I have found some instructions but theme seem complicated and to be honest I don't even know if they were specifcally for achieving what I am looking for.
If needed I might be able to find again and provide link to what I have found.

Unfortunately again, this is not configurable to the extent that you want to configure it. Assuming the pulseaudio plugin, the notification is hard coded into the app.
However, it might be possible to uncheck the "show notifications" option and use another tool to monitor and display notifications, one that allows you to configure the layout of the notification bubble. Here are some sample scripts, but you'd need to modify them in some manner to meet your specific use case:

Keep in mind though, that any options available using the "notify-send" command will need to be supported by the notification daemon - in our case xfce4-notifyd. It currently doesn't support middle of the screen bubble.
You can also look at replacing xfce4-notifyd with another notification daemon - like dunst which I believe does support some of the options you are looking for.
